Salchichi
Ingredients:
For coating:
500 g pork
suet
200 g flour
For dough:
400 g flour
4 egg yolk
¼ l cold water
1
tablespoon vinegar
For filling:
jam
For spreading:
Sugar powdered with vanilla
Preparation:
Pork suet grinds in meat machine and knead with 200 g
flour. Divide it into 3 pieces and leave on plate.
In the pot of ¼ l put 1 tablespoon of vinegar and pour to
the top with cold water. Knead the dough with that water, 400 g flour and 4 egg
yolks.
When you knead the dough stretch it and coat with one
part of mass of pork suet. Fold the coating crust on 3 pieces and then one more
time on 3 pieces - like dough on pictures.
Leave the dough about 20 minutes,
and repeat this procedure with remaining 2 pieces of mass of pork suet. Then
leave the dough 2 hour into the fridge.
Stretch the dough and cut into pieces about 8x5 cm
(3.15x2 inches). Put on the center one teaspoon of jam and fold. Press edges. Put
pieces in baking tray and bake on 200ºC (392ºF) until they are golden brown and
put forth leaves. Take out of baking tray and spread with powdered sugar with
vanilla.

500 g svinjskog
sala
200 g brasna
Za testo:
400 g brasna
4 zumanceta
¼ l hladne vode
1 kasika sirceta
Za fil:
dzem
Za posipanje:
Prah secer zamirisan vanilom
priprema:
Salo samleti na masini za meso i zamesiti sa 200 g brasna.
Podeliti masu na 3 dela i ostaviti na tanjir.
U lonce od ¼ l sipati 1 kasiku sirceta i doliti do vrha
hladnu vodu. Zamesiti testo od ove vode, 400 g brasna i 4 zumanceta.
Kad zamesite testo, rastanjiti koru i premazati sa jednim
delom sala. Presaviti namazanu koru na tri dela uzduz, a zatim jos na tri dela –
kao na slikama.
Ostaviti testo da otstoji oko 20 minuta, pa ponoviti postupak
sa preostala dva dela sala. Ovako pripremljeno testo ostaviti 2 sata u frizider.
Rastanjiti
testo debljine ½ cm (1/5 incha) i seci parcice oko 8x5 cm (3.15x2 incha). Na
svaki staviti po kasicicu dzema i presaviti. Pritisnuti ivice. Poredjati
parcice u pleh i peci na 200ºC (392ºF) dok ne porumene i razlistaju se.
Izvaditi iz pleha i jos vruce posuti prah secerom.
